Instructions
Start by peeling the peaches. Remove the stones and cut them into small pieces.
2 white peaches
Puree the peaches in a blender until smooth. If the peaches aren’t sweet enough, add a little sugar. But remember, the beauty of the Bellini lies in its simplicity.
granulated sugar
Push the puree through a sieve to remove any remaining chunks, ensuring a smooth texture.
Put a couple of tablespoons of the peach puree into a Champagne flute. Slowly top up the glass with chilled Prosecco, gently stirring as you pour to blend the puree with the wine. The ideal ratio is one part peach puree to two parts Prosecco.
4 oz Prosecco
Serve immediately and enjoy the delicate, refreshing flavors of your homemade Bellini. Buon appetito!
Notes
Prosecco Quantity: The traditional Bellini recipe suggests a ratio of one part peach puree to two parts Prosecco. For one cocktail, you might use around 2 ounces (60 ml) of peach puree and 4 ounces (120 ml) of Prosecco. Therefore, the amount of Prosecco you'll need will depend on how much peach puree you get from your two peaches. On average, two medium-sized peaches might yield around 4 to 6 ounces of puree (120-180 ml), which would make 2-3 Bellini cocktails when mixed with the appropriate amount of Prosecco.Remember to serve immediately to enjoy the Bellini at its freshest, and adjust quantities as per your personal preference and the sweetness of the peaches. Cheers!
